Chocolate Mint Cake

So, last night at 7, my ten year old son suggests we make a cake. When asked what kind, he replied "Chocolate mint!!!". Of course. So here I am with every single ingredient on hand....minus the star: peppermint extract. So, after sending 5 drafts of grocery lists to my poor husband, he trudged down to Publix after work and made Ethan's dream my reality.

There are so many ways to make a chocolate cake, but I borrowed this recipe from Food Network Magazine and tweaked it a little bit....I hope you enjoy it as much as my family does!

For the cake:

Cooking spray (I use Pam for Baking)
1 cup unsweetened cocoa powder
21/2 cups all purpose flour
11/2 tsp baking powder
1 tsp baking soda
1 tsp salt
2 large eggs, room temperature
3/4 cup vegetable oil
1/2 cup sour cream or 3/4 cup buttermilk
1 tsp vanilla extract
1 tsp peppermint extract

Preheat over to 350. Spray two 9 in rounds with cooking spray.
Whisk cocoa powder together with 1 1/2 cups boiling water and set aside.
Whisk all dry ingredients until combined. Add all remaining ingredients to flour mixture in a stand mixer at medium speed until just combined.
Mix in cocoa mixture at low speed until just blended, then finish by hand, so as not to overmix.
Divide the batter between the two pans and cook 25-35 minutes, depending on how hot your oven runs. Cool on wire racks.

For the filling:

1 1/2 cups heavy cream
4-5 tbsp confectioners sugar
1/2 tsp peppermint extract
3-4 drops green food coloring
1/2 cup mini chocolate chips, if desired

Whisk first four ingredients in a stand mixer on medium-high speed until stiff peaks are formed. Gently fold in chocolate chips if you are using them.

For the frosting:

1 can vanilla frosting
8 drops green food coloring
1 tsp peppermint extract

Mix together all three ingredients until combined.

You may want to make your own frosting. I get a little lazy in the frosting department, so I use store bought. If you want to DIY, just beat 2 cups powdered sugar, 2 tbsp softened butter, 2 tbsp milk and 1/2 tsp vanilla at medium speed.
